tuesdays things

Well im really wishing I could stay home today.....
It started pourng last night about 11pm - and its pouring now too....
Not sure if it rained allnight - coz i actually slept thru those hours - a mirical i know.... havent slept like that in 5 days it felt great - no little people in my bed either was a big bonus!!!

Well im of to work - at about 7.30am - yuck.... take the kids to Carol's then head on in to hopefully be there by 8ish....
Need to do as many hours as possible this week to pay for my computer for friday
I have deleted as much as possible of this and it is still telling me it has no room.....

tonight is zumba night - which i havent been to in 4 weeks due to being sick - but can't go tonight either as Zac is playing footy in Newcastle [well thats if it isnt called off with the rain]...

Okay off to put the dinner in the slow cooker - try to brave the rain to get pizza boxes from the shed for the orders from last night - and then shower time....

beautiful day here but cold. John left at 5am and the girls slept in so had to wake Kate at 7am so she could get to school for band and then I woke Grace at 7.30ish. She didn't want to go to school today and then when we got there her teacher was away, hope she is ok

off to the dentist this afternoon to fix a tooth I broke last week then pick up Kate from aerobics. Mum's looking after Grace tonight as Kate and I have to go to a meeting at Kate's new school for 2012

hey all!

just trying to get through today without yelling at beatrix, or leaving!

so far we've had dancing for isobel, grocery shopping done, alice has been - yay for a clean house, and the RACV man came to check the old car...hope it passed the test, will find out later today...

we've all had lunch, isobel is about to go to kinder and after B goes to bed I am going to enjoy the peace and quiet....

egg and bacon pie for dinner...bet get that done, one less thing to do later...

Peta I haven't been to Zumba in months, completely unmotivated & have to admit i got a bit bored with the same routines all the time

spent the morning with Sara (Peta you know Sara who came to your house for the retreat day with me last time?) and her little girl, and newborn baby girl She liked the album i think! Took her a copy of scrapbook creations incase she gets a bit of 'me' time and wants to have a cuppa and a magazine read
now home and annie is having some lunch then going to bed

Cooking Time

40 minutes

Ingredients (serves 4)

• 8 slices multi-grain bread, crusts removed - i needed 9 for the dish i used
  
• 250g Middle Bacon, rind and fat removed, chopped
  
• 1 brown onion, coarsely chopped
  
• 4 eggwhites, lightly whisked
  
• 4 eggs
  
• 1/2 cup grated mozzarella cheese
  
• 1/4 cup grated light tasty cheese
  
• steamed veges or salad
  

Method

1. Preheat oven to 180°C. Lightly grease a 3cm deep, 22cm
   (base) flan or quiche dish. Using a rolling pin, roll out bread until
   flat. Arrange bread over base and sides of dish, overlapping so base is
   completely covered. Place dish on an oven tray. Bake for 10 minutes or
   until bread is lightly toasted.
   
2. Heat a non-stick frying pan over medium heat. Add bacon and onion. Cook, stirring, for about 5 minutes until onion is soft and bacon cooked.
   
3. Spread half the bacon mixture over bread base. Pour
   eggwhites over bacon mixture. Crack whole eggs over mixture. Sprinkle
   with remaining bacon mixture and combined mozzarella and tasty cheeses.
   Season with salt and pepper.
   
4. Bake pie for 20 minutes or until eggs have set. Cut into 4. Serve with mixed steamed vegetable
